I picked up a Martin 75, model CB at Tomahawk, and now
a Martin 75, model CC locally.
The prior has the twist grip throttle.
The later has a twist grip "neutral shift" with a red button
on the end that appears to bring the throttle down to
    idle when held in.
What’s the idea behind using the red button?
    Emergency "slow down" ?

My Martin has this feature. It’s to slow down to fast idle without having to move the magneto lever to slow down. May be good when going over waves or passing rowers and swimmers.

Thanks John. That makes sense, a "Red Panic Button"!
Perhaps there’s a vintage ad "out there" touting the
    new button.
